Pumpkin Cake-o'-Lantern Go beyond the candy corn this year and throw a terrific Halloween party with these festive recipes that won’t scare you away and treat your guests with savory menus for spooky snacks and sweet treats.

1.    Halloween Cupcakes and Desserts

Pumpkin Cake-o'-Lantern



5 1/2 cups flour

4 tsp. baking powder

1 1/2 tsp. baking soda

1 tsp. salt

4 tsp. ground cinnamon

1 tsp. ground ginger

1/4 tsp. ground nutmeg

1/2 tsp. ground cloves

6 large eggs, at room temperature

1 ¼ cups milk, at room temperature

1 cup (2 sticks) butter or margarine, at room temperature

2 ¼ cups sugar

1 can (15 oz.) pumpkin

1 tbsp. vanilla extract

½ cup vegetable oil


9 cups powdered sugar

2 packages (8 oz. each) cream cheese, at room temperature

1 tbsp. vanilla extract

How to make it

  1. Get a large bowl and stir together the flour, baking powder, baking soda, then add spices and salt.
  2. Take a medium bowl, stir together the pumpkin, milk and vanilla extract until smooth.
  3. Take another large bowl, beat the butter or margarine and mix together with an electric mixer. Next, beat in the sugar. Then beat in the eggs, one at a time, mixing well every time you add an egg. Then alternately beat in the milk/pumpkin mixture and the flour mixture until combined.
  4. Heat the oven to 350º and butter two 10-inch bundt cake pans.
  5. Divide the batter between the two prepared pans. Bake for 50 to 60 minutes or until it’s ready (insert a toothpick into the center of the cakes and check whether it comes out clean).
  6. Let the cakes cool in the pans for 15 minutes, then turn them out onto wire racks to cool completely.

Directions for Frosting:

Get a large bowl and beat the cream cheese until smooth. Then mix in the vanilla extract. Next beat in the powdered sugar gradually until the frosting can be spread easily. Finally, color about 1 cup of the frosting green and the rest orange.

Assemble the Cake:

First, trim the bottoms of the cakes and make sure they lie flat against each other. Then frost the flat surface of the bottom cake and place the other cake on top. Frost the entire cake orange. When the frosting becomes dry, make green frosting leaves and put the ice cream cone on top to make a stem.

Decorate the Cake:

Sprinkle sugar over your work surface and flatten 12 large yellow and white gumdrops together with a rolling pin to form a pancake about 1/4 inch thick. Then cut out the eyes, nose and mouth. Microwave 2 tablespoons of chocolate chips for about 60 seconds. Dip the left side and bottom of the facial features in the melted chocolate. Dab some water onto the top surface of each feature, sprinkle the edible glitter on top, and finally press the facial features onto the cake.

Mini MonsterIngredients:

  1. 1 mini cupcake
  2. 1 Circus Peanut, halved
  3. 2 candy eyes
  4. Blue frosting
  5. Red whip licorice

How to make it

  1. First, unwrap the cupcake and turn it upside down. Use a writing or star tip to frost the cupcake from the top down.
  2. Then attach the eyes, put the licorice antennae on top and use peanut halves to create sneakers.

2.    Halloween Snacks

Ghost Toasts

  • White Bread (1 slice per ghost)
  • Currants
  • Whipped cream cheese

How to make it

  1. For each, toast a slice of white bread and then use a knife to cut a ghost shape from it. Or you can take a gingerbread-girl cookie cutter and use it to make a ghost shape.
  2. Let the cutouts cool and then spread on a generous coating of whipped cream cheese.
  3. Use currants to create the eyes and mouths.

Mickey Mummy Cupcakes

Mickey Mummy CupcakesIngredients

  • Batch of baked cupcakes
  • Confectioner's sugar 
  • Wax paper 
  • Rolling pin
  • Kitchen scissors 
  • Marshmallows 
  • White frosting 
  • Chocolate-covered raisins 
  • Chocolate nonpareil candies 

How to make it

  1. Spread wax paper and dust it with confectioners sugar, then flatten a bunch of marshmallows with a rolling pin.
  2. Take kitchen scissors, cut the rolled marshmallows into thin strips and set them aside for now.
  3. Frost the cupcakes. To create Mickey ears press a pair of nonpareil candies with white side down into the frosting at the top of each cupcake. Then add a pair of chocolate-covered raisin eyes.
  4. At random put marshmallow strips over each cupcake, but leave the eyes exposed, so that it would look like a mummy. Then gently press the strips into the icing so they stick in place. After the cupcakes are sufficiently covered, take the kitchen scissors and trim the marshmallow around the perimeters. 

4.    Halloween Dinners

Mummy Meatloaf

  • American cheese
  • Meatloaf from your favorite recipe 
  • Olive slices

How to make it

  1. First make the meatloaf recipe you and your family like most of all and shape the loaf to look like a mummy's body with crossed arms. Bake the loaf until it's ready.
  2. Let it cool about 3 minutes, then apply 1-inch-wide strips of American cheese across the body as shown, but make sure you leave some space on the head for the eyes made from olive slices. Use the scissors to trim any overhanging cheese and put the mummy into the still-warm oven for about a minute so that the cheese could melt slightly.

Pumpkin Roll-ups

  • Sun-dried-tomato tortillas
  • Cream cheese or American cheese
  • Cilantro or parsley sprigs
  • Toothpicks

How to make it

  1. Lay American cheese slices or spread cream cheese on sun-dried-tomato tortillas.
  2. After you roll them up, cut them into 1-inch sections. Finally take a toothpick with a cilantro or parsley sprig atop and secure the rolls.

How to make it

  1. First toast English-muffin halves just a little, then spread them with pizza sauce, and sprinkle cheese on top.
  2. Use such toppings as pepperoni, olives, carrot curls, and other veggie pieces to create a face.
  3. Before serving the dish broil it briefly to heat the pizza and melt the cheese.
